Egg McMuffin Breakfast Recipe

Ingredients (8 servings):

  • 4 eggs
  • 1/4 cup milk
  • 2 thin slices of cheese (we used cheddar)
  • 4-6 sausage links (more for meatier breakfast sandwiches, less for thinner ones)
  • 8 English Muffins
  • ketchup or BBQ sauce (optional)

Instructions:

  1. Preheat the oven to 350 degrees. Grease a muffin pan and set it aside.
  2. Warm and cut the sausage links into small pieces. The sausages we bought were pre-cooked and frozen, so we warmed them up in the microwave first.
  3. Crack 4 eggs into a bowl. Stir them up a little, only a few seconds is required.
  4. Crumble the cheese into the egg mixture.
  5. Add the sausage and milk to the eggs and cheese bowl and mix everything together for a few seconds.
  6. Use a spoon to put the McMuffin mix into the muffin pan. The batter will expand, so only fill each section about halfway.
  7. Cook about 10 minutes, depending on how runny you like it. We took ours out at 9 minutes, decided they were too runny, and put them back in for another 3 minutes, so 12 minutes total for us was perfect.
  8. Let them cool for a minute or two and then use a fork to slowly go around the edges of each McMuffin, prying the edges away from the pan and then use the fork to lift them out onto an English muffin.
  9. Add ketchup or BBQ sauce, bacon, etc., and enjoy!
