Hash Browns with Spinach

Ingredients (2-3 servings):

  • 3 medium Russet potatoes, washed (and peeled if desired)
  • about 1 or 1 1/2 Tbsp. olive oil
  • about 2 C. baby spinach, washed and chopped
  • salt and pepper to taste
  • optional: ketchup
Instructions:
  1. Grate potatoes. Rinse with water until water runs clear. Pat dry with a paper towel or clean dish cloth.
  2. Heat olive oil in a frying pan on medium heat.
  3. Add grated potatoes and spread evenly in the pan. Cook about 6 minutes.
  4. Add spinach and mix with potatoes.
  5. Spread mixture evenly in pan and cook about 6 minutes.
  6. Flip and cook about 6  minutes more.
  7. Serve warm with salt and pepper and ketchup if desired.
