Healthy Strawberry Oatmeal Muffins Recipe

These strawberry oatmeal muffins are perfect for a quick breakfast or snack. Not too sweet and not too dense. You can substitute other things like nuts, blueberries, or raisins in place of the strawberries.

Ingredients (makes 12 muffins):

  • 1 C. quick cooking oats
  • 1 C. milk
  • 1 egg
  • 1/4 C. canola (or vegetable) oil
  • 1 C. all-purpose flour
  • 1/3 C. brown sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 3/4 C. chopped strawberries
Instructions:
  1. Preheat oven to 425 degrees F. and lightly grease a muffin pan.
  2. In a small bowl, combine oats and milk. Let soak for 15 minutes.
  3. In another bowl, mix egg and oil.
  4. Add oat mixture to egg mixture.
  5. Add in flour, sugar, salt, and baking powder. Then mix only until the flour mixture is no longer dry.
  6. Fold in the chopped strawberries.
  7. Pour batter into muffin cups evenly, about 2/3 full.
  8. Bake for 20-25 minutes, or until toothpick comes out clean.
