Chocolate Chip Cookies (without eggs)

Have you ever tried substituting flax seed meal for eggs while baking? It worked like a charm in these chewy chocolate chip cookies. And the best part is that you can pick in the cookie dough without worrying about eating raw eggs!

Chocolate Chip Cookies (without eggs) Recipe

Ingredients:

  • 2 1/4 C. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 sticks unsalted butter, at room temperature
  • 3/4 C. granulated sugar
  • 3/4 C. brown sugar
  • 1 tsp. vanilla
  • 2 Tbsp. flax seed meal
  • 6 Tbsp. water
  • 2 C. semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350 degrees F. and line cookie sheets with parchment paper.
  2. In a medium bowl, combine the flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, use an electric mixture to mix the sugars and butter until smooth. I usually cut the room temperature butter into smaller sections so it’s easier to mix.

4. In a small bowl, combine flax seed meal and water. Stir and let sit for 2 minutes. Then add the mixture to the sugar/butter mixture. Add vanilla. Mix with the electric mixer.

5. Gradually beat in the flour mixture.

6. Stir in the chocolate chips. (Go ahead and taste-test it now 🙂 )

7. Scoop into about 1 Tbsp.-sized balls and place onto prepared baking sheets and bake at 350 degrees F. for 9-11 minutes.

8. Remove from oven and let sit a few minutes on the baking sheets to finish cooking.

9. Remove cookies from baking sheets and let cool completely. Store in an air tight container to keep them chewy.

These cookies would taste great as an ICE CREAM TOPPING!
