Healthy & Chewy Old-Fashioned Oatmeal Cookies

These healthy, chewy old-fashioned oatmeal cookies are the best! They are super easy to throw together and are made with half whole wheat and lots of oats. This recipe makes a lot. If you don’t want to eat them all at once, you can halve the recipe. But what I really recommend is to just make them all and freeze some of the cookies for later. They are yummy right out of the oven or right out of the freezer. 🙂

Ingredients (makes about 60 cookies) :

  • 2 sticks (8 oz) unsalted butter, softened
  • 1 C. brown sugar
  • 1/2 C. granulated sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 C. whole wheat flour
  • 1 C. all-purpose flour
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 C. old-fashioned oats

Instructions:

  1. Preheat oven to 350 degrees F. 
  2. Cream together softened butter and sugars. Mix in vanilla and eggs.
  3. Add dry ingredients (flours, salt, baking soda, and cinnamon). Mix until moistened.
  4. Stir in oats.
  5. Scoop cookies onto cookie sheet using a tablespoon scoop.
  6. Bake in preheated oven for 6-9 minutes.
  7. Let cookies sit on baking tray for 2-3 minutes after coming out of the oven. They will look fluffy when they come out of the oven, but after a couple minutes, they will set and become beautiful chewy oatmeal cookies.
