Ingredients (for about 3 dozen+):

  • 1/2 C. butter (1 stick), softened
  • 2/3 C. brown sugar
  • 1/2 tsp. vanilla
  • 1 egg
  • 3/4 C. all-purpose flour
  • 1/4 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1 1/2 C. rolled oats
  • 3/4 C. raisins
  • 1/4 C. chopped walnuts, optional

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Cream together the butter, brown sugar, vanilla, and egg.
  3. Add flour, salt, baking soda, and cinnamon. Stir.
  4. Add oats, raisins, and walnuts. Stir.
  5. Place dough in the freezer for about 10 minutes (this is optional… I read that it makes the cookies chewier.)
  6. Scoop about 1 1/2 tsp. scoops onto cookie sheet, about 2 inches apart from each other.
  7. Bake for about 8 minutes. Remove from oven and let sit for 5 minutes before transferring cookies to a plate or cooling rack.
