Orange Almond Cake

I made this orange almond cake for a family get together and everyone was “wowed” by it, even my very healthy mom! I hope you like it too 🙂

Ingredients (makes 1 round (9×1 1/2 inches) layer pan or an 8x8x2 or 9x9x2 inch square pan.):

  • 1 1/4 C. all-purpose flour
  • 1 C. white sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 C. milk
  • 1/3 C. shortening
  • 1 egg
  • about 2 tsp. grated orange peel (see the note at the bottom of the page)
  • about 1/4 C. sliced almonds
  • about 1 Tbsp. powdered sugar

Instructions:

  1. Preheat oven to 350 degrees F.
  2. Mix together flour, white sugar, baking powder, and salt.
  3. Add milk, shortening, egg, and grated orange peel and beat with an electric mixer until batter is smooth.
  4. Pour batter into a greased and lightly floured pan.
  5. Sprinkle almonds on top.
  6. Bake at 350 degrees F. for 40 minutes if using a round pan or 40-45 minutes if using a square pan.
  7. Sprinkle powdered sugar on top of cake right when it comes out of the oven.
  8. Cool about 10-15 minutes before serving.

*This cake tastes great with a scoop of vanilla ice cream, a glass of cold milk, or even served with a very simple fruit salad (you can use the rest of the orange in the fruit salad.)
