Cabbage and Chicken Stirfry

Ingredients:

  • 1 chicken breast, cubed
  • 1 C. long-grain rice, brown or enriched
  • 1/2 of a green cabbage, chopped into about 1 inch squares
  • 1 large red bell pepper, diced
  • 1-2 zucchinis, chopped
  • optional: 1 tsp. sesame oil
  • salt, pepper, and soy sauce to taste
Instructions:
  1. Cook the rice according to package. Enriched rice usually takes about 20 minutes and brown rice usually takes about 50 minutes.
  2. Cook the cubed chicken thoroughly in a pan with water. When the chicken is cooked all the way, leave about 1/4 C. water in the pan with the chicken. Keep it at a boil.
  3. Add the chopped cabbage. Mix and cook for about 3 minutes.
  4. Add the bell pepper. Mix and cook about 3 more minutes.
  5. Add the zucchini. Mix and cook until all of the vegetables are cooked, but not mushy (they should still be somewhat firm).
  6. optional: Add sesame oil and mix.
  7. Serve chicken and vegetable mixture with the rice. Add salt, pepper, and soy sauce to taste.
