Caramelized Sweet Potatoes

These caramelized sweet potatoes make a great side for a Thanksgiving or Christmas dinner. Enjoy!

Ingredients (3-5 servings):

  • 2-3  sweet potatoes
  • 2 Tbsp. butter
  • 2 Tbsp. water
  • 1/3 C. brown sugar
  • 1/2 tsp. cinnamon
  • 1 pinch ground cloves
  • 1 pinch ground ginger
  • a dash of allspice
  • 1/2 tsp. salt

Instructions:

  1. Preheat oven to 4oo degrees F.
  2. Wash and peel sweet potatoes. Slice into wedges and place in mixing bowl.
  3. On low heat, melt butter in a small saucepan. Add water, brown sugar, cinnamon, cloves, ginger, allspice, and salt. Stir continuously so it doesn’t burn. Stir until smooth. Pour sauce over sweet potato wedges in the mixing bowl and mix.
  4. Pour sweet potatoes in a greased 13×9 inch pan (I recommend lining it with foil to make the mess easy to clean up). Arrange sweet potatoes in a single layer. Cover the top with foil and bake for 35 minutes. Take foil off the top, mix sweet potatoes in the sauce and spread back to a single layer on the pan. Increase heat to 450 degrees F. and cook  5 more minutes.

Goes great with a spinach salad and chicken or turkey and a roll!

I know this recipe is categorized as “dinner”, but I think it would also be a great dessert if you add a scoop of vanilla ice cream on top!
