Chicken Stock or Broth Recipe

Rotisserie chickens from the grocery store are amazingly delicious, but because of their prices I don’t usually give in and buy them. But when I do, I like to make the most of it! So, before you conveniently toss those bones and fat into the garbage can, remember to be frugal, and think of all the yummy soups and meals you can make with some homemade chicken stock. And here is a great recipe to get you started:

Ingredients:

  • a whole chicken carcass from a rotisserie chicken (or several chicken bones and some chicken skin and fat)
  • 1 medium yellow onion, chopped
  • 2 carrots, cut in half
  • 2 cloves garlic, cut in half
  • 2 bay leaves
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 10 stems Italian style parsley (chop stems and leaves)
  • 4 quarts water
Instructions:
  1. Combine all ingredients in a large pot. Stir and bring to a boil.
  2. Turn heat to medium, and let simmer uncovered for about 4 hours, stirring occasionally.
  3. Let cool, or give the pot an ice bath in the sink to help it cool faster to reduce any bacteria from growing.

Drain the liquid stock or broth into the container you want it to be in. It does freeze well if you aren’t planning on using it right away.
