Chinese Chicken Salad

This recipe came from my mom, who always makes fabulous food!

Ingredients:

  • 1 small green cabbage, chopped fine
  • 1 bunch green onions, chopped (optional)
  • 2 packages uncooked Ramen noodles
  • 1 1/2-2 lbs. chicken, cooked and diced
  • 2 Tbsp. olive oil
  • sesame seeds, slivered almonds, and/or sunflower seeds

Sauce:

  • 1/2 C. canola oil
  • 7 Tbsp. white vinegar
  • 1/2 C. sugar
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 Ramen seasoning packets

Instructions:

  1. Combine cabbage, green onions, and chicken in a large salad bowl.
  2. Lightly brown the sesame seeds, slivered almonds, and/or sunflower seeds with the olive oil on low heat so they don’t burn. Add them to the salad.
  3. Mix the sauce ingredients and pour over salad.
  4. Add crushed Ramen noodles and mix.

***This Chinese Salad is best if eaten shortly after being prepared so the ramen noodles don’t get soggy.
