Creamy Broccoli and Chicken over Brown Rice Dinner Recipe

Ingredients (about 4 servings):

  • 2-3 boneless, skinless chicken breasts
  • about 2 1/2 C. chopped broccoli
  • 1 large carrot, diced
  • 1 can Campbell’s condensed Broccoli Cheese soup or Cream of Broccoli soup
  • 1/4 C. milk
  • 3 C. cooked rice

Instructions:

  1. In a medium pot, cover chicken all the way with water. Bring to a boil and let boil until chicken is cooked all the way through. You can then cut the chicken into smaller pieces if you want to.
  2. Add chopped broccoli and diced carrot to the water with the chicken and continue cooking until the vegetables are tender.
  3. Drain the water out.
  4. Add the can  of broccoli soup and the milk. Simmer for about 5 minutes, stirring frequently.
  5. Serve the chicken and vegetables over warm rice.
