Creamy Spinach White Sauce Recipe – Over Chicken and Brown Rice

Not everyone likes spinach in my family (OK, it’s just me) but I accept the challenge to get them to eat spinach! This creamy, white spinach sauce did the trick. I served it over chicken and brown rice for a leaner meal, but you are welcome to experiment and let me know in the comments how it goes!

Ingredients:

  • 2 1/2 Tbsp. butter
  • 1 clove garlic, minced
  • 2 Tbsp. diced yellow onion
  • 2 Tbsp. all-purpose flour
  • 1 3/4 C. milk
  • about 1 C. chopped baby spinach leaves
  • about 1/4 C. grated Parmesan cheese
  • 1 tsp. mustard
  • a dash of paprika
  • salt and pepper to taste

Instructions:

  1. Melt the butter on medium heat in a pan.
  2. Add garlic and onion, and cook until the onion looks transparent.
  3. Stir in flour, then add milk. Bring to a simmer.
  4. Stir in chopped spinach leaves and grated Parmesan cheese.
  5. When sauce has thickened, add mustard, paprika, salt, and pepper. Stir.

Serve sauce on top of brown rice and cubed chicken breast. Absolutely delicious!
