Easy Baked Potato and Spinach Salad Dinner Idea

If you’re crunched for time but still would like to eat healthy meals, try a quick baked potato and spinach salad dinner.

Ingredients:

  • 1 Russet potato, peel on
  • 1 chopped green  onion
  • slice of butter
  • a sprinkle of grated cheese
  • salt and pepper to taste
  • a handful of prepared baby spinach
  • 1/2 tsp. balsamic vinaigrette salad dressing

Instructions:

  1. Wash the potato, place on plate, and microwave about 5 minutes, or until potato is soft and cooked through.
  2. Slice potato in half and gently mash it up with your fork. Spread a little butter on top and let it melt. Gently mix in cheese, salt, and pepper. Sprinkle chopped green onions on top.
  3. Drizzle salad dressing on top of spinach and you’re all set to eat!

I just recently had my second baby, and I have never appreciated prepared spinach and prepared other salads so much. I’m trying to eat healthy but it is so easy to just dig into the ice cream or grab a Reese’s from the cupboard. Having fresh fruits and vegetables ready to grab make eating healthy MUCH easier and convenient. It’s especially awesome when you can get a big bag of prepared salad for $1 (like I did last week)! But if nothing’s on sale, you can prepare your own salad so it’s ready to grab when you’re ready to eat.
