Enfrijoladas – Mexican Dinner Recipe

This is a very inexpensive recipe and fast and easy if you already have the mashed beans prepared. You can find a great recipe for mashed beans here.

Ingredients:

  • homemade mashed beans
  • corn or flour tortillas
  • grated cheese
  • sour cream and salsa (optional)

Instructions:

  1. Simmer mashed beans in a frying pan. Add water if they are too thick. They should be thin enough to dip a tortilla in and out.
  2. Place a tortilla (or two tortillas) in the beans. Let cook about 1 minute. Using tongs, turn the tortillas over and make sure they are immersed in the beans. Cook another minute or so. With the tongs, fold each tortilla in half and place directly on a plate. Poor a ladle-full of the mashed beans on top.
  3. Sprinkle cheese on top.
  4. Serve with a fresh salad (we usually do something simple like washed lettuce with a diced tomato).
