Honey Roasted Potatoes Dinner Recipe

I found a recipe for Honey Roasted Red Potatoes here. It had raving reviews! I read through some of the comments and here is what I actually ended up making. These potatoes turned out great!

Ingredients:

5 red potatoes (I used the larger kind, not those tiny ones)
3 Tbsp. diced white onion
3 Tbsp. olive oil
3 Tbsp. honey
2 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. pepper

Instructions:

Preheat oven to 375 degrees F.
Line a 9×13 inch pan with foil and spray with nonstick cooking spray.
Cut the potatoes into bite-sized pieces. Place in the foil-lined pan.
In a small bowl, stir together onions, olive oil, honey, mustard, salt, and pepper. Drizzle over the potatoes. Carefully mix the potatoes so that they all have a little bit of sauce on them. Spread them out so they are not layered on top of each other (as much as possible).
Bake at 375 degrees F. for about 40 minutes, or until tender (after about 20 minutes, mix the potatoes and put them back in the oven).
When the potatoes are tender, broil for 2-3 minutes to make them crispy.
