Lentil Soup Dinner Recipe

Update: This recipe was my first try making lentil soup. It was okay, but I have learned a few things since then and recommend following this healthy lentil soup recipe instead —- not as dry and much more flavor! Ingredients (yields about 8 servings):

  • 1 lb dry lentils
  • 3 cloves garlic (minced or sliced)
  • 1 or 1/2 red bell pepper (chopped)
  • 2 or 3 carrots (chopped)
  • about 1 C. chopped parsley
  • 1 can diced tomatoes
  • Worcestershire sauce
  • salt and pepper

Instructions:

  1. Cook lentils according to package (I boiled them in 10 cups water instead of 8).
  2. Chop garlic, bell pepper, carrots, and parsley. Add to the lentils as they cook. (Be careful to not cook on too high of heat so they don’t get burned. Stir occasionally.)
  3. Add canned tomatoes, Worcestershire sauce, and salt and pepper at the end.

Great with bread and butter!
