Roasted Asparagus Side Dish Recipe

Ingredients (about 4 servings):

  • 1/2 bunch asparagus
  • about 1 Tbsp. olive oil
  • salt and pepper to taste

Instructions:

  1. Preheat oven to 400 degrees F.
  2. Wash asparagus and snap off the thick bottoms.
  3. Lay asparagus in an 8×8 inch baking dish, one layer thick.
  4. Drizzle olive oil on top and sprinkle lightly with salt and pepper.
  5. Mix with your hands until all the asparagus is lightly coated with olive oil. Arrange in a single layer in the pan.
  6. Bake for about 20 minutes.
