Sauteed Kale with Onion

Kale is king (queen?) Some of your kids (or other adults!) might not like the taste however. So you should try this sauteed kale, with diced onions. Delicious!

Ingredients:

  • 1-2 Tbsp. olive oil
  • 1/2 bunch kale
  • about 1/4 C. diced onion
  • salt and pepper, optional

Instructions:

  1. Wash kale leaves well. Pat them dry with a dish cloth or paper towel and then chop them into smaller pieces.
  2. Warm a pan to medium/medium-high heat. Add olive oil.
  3. When the oil is hot, add the diced onions and frequently saute them so they don’t burn (about 3-4 minutes).
  4. Add the chopped kale. If your pan in on the smaller side, just add one handful at a time. It shrinks as it cooks.
  5. Continue mixing until the kale and onions are cooked. The kale should be a bright green color.
  6. Add salt and/or pepper if desired.

This side would go great with an Asian dish, like fried rice, chow mein, or Ramen stirfry!
