Shepherd’s Pie Casserole Recipe

Ingredients (2 quart casserole dish, or about 6 servings):

  • Instant Mashed Potatoes (follow instructions to make 6 servings). Leave out the butter/margarine.
  • 1 C. frozen peas
  • 1 C. frozen mixed vegetables
  • about 1 lb. cooked ground beef (about 2 C.)
  • 1 Tbsp. ketchup
  • 3/4 C. beef broth
  • about 3/4 C. Colby Jack or Cheddar cheese
  • a dash of paprika

Instructions:

  1. Preheat oven to 375 degrees F.
  2. Make 6 servings of instant mashed potatoes, leaving out the butter/margarine. Stir in 1/2 C. of grated cheese.
  3. In a bowl, mix together ground beef, ketchup, and beef broth. Spread this mixture in the bottom of a 2 quart glass casserole dish.
  4. Spread the frozen peas and mixed vegetables on top of the ground beef.
  5. Spread the cheesy potatoes evenly over the frozen vegetables.
  6. Sprinkle a little paprika and the rest of the grated cheese (about 1/4 C.) on top of the potatoes.
  7. Cook at 375 degrees F. for 20 minutes.
  8. Cool for 5-10 minutes before serving.

For a lovely country-style dinner, serve this shepherd’s pie with broccoli florets and ranch dressing and a biscuit on the side.
