This recipe comes from the side of ALBERS Yellow Corn Meal box. These muffins compliment taco soup or pretty much any type of chile very well!
Ingredients (makes 18-20 muffins):
- 1 1/2 C. all-purpose flour
- 2/3 C. granulated sugar
- 1/2 C. ALBERS yellow corn meal
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 1/4 c. milk
- 2 large eggs, lightly beaten
- 1/3 C. vegetable oil
- 3 Tbsp. butter or margarine, melted
Instructions:
- Preheat oven to 350 degrees F.
- Grease muffin cups.
- Combine dry ingredients in a medium mixing bowl.
- Combine wet ingredients in a smaller bowl. Mix well.
- Pour wet mixture into dry mixture and stir just until dry ingredients are moistened.
- Spoon mixture into muffin cups about 2/3 full.
- Bake 18-20 minutes or until toothpick comes out clean.
We have made these cornbread muffins several times now, and they are so delicious! My kids love them as snacks throughout the week too.
