Healthy Grilled Cheese and Pesto Sandwich Lunch Recipe

This grilled cheese sandwich recipe is healthy, flavorful, and so easy to throw together!

Ingredients (1 sandwich):

  • 2 slices whole wheat bread
  • about 1 Tbsp. PESTO SAUCE
  • about 1/3 of a Roma tomato, chopped
  • about 1/8 C. grated Colby Jack cheese
  • butter

Instructions:

  1. Spread pesto sauce on one side of each piece of bread.
  2. Arrange chopped tomatoes in a single layer on top of the pesto on one slice of bread.
  3. Sprinkle cheese on top of the tomatoes. Top with the pesto side of the other piece of bread.Grilled Cheese sandwich with pesto and tomato
  4. Spread a thin layer of butter over the top piece of bread.
  5. Cook on medium-low heat, butter side down, until cheese starts to melt or bottom of sandwich gets crispy. Spread a thin layer of butter on the top piece of bread before flipping the sandwich over. Flip the sandwich carefully, and cook the other side until crispy.
