Pasta Shells with White Cheddar, Tuna, and Tomato

This was a fast, easy, and inexpensive recipe I got from the back of a Pasta Roni box. I just made a couple changes (only one can of tuna instead of two and adding chopped tomatoes.) This makes a delicious, flavorful meal for lunch or dinner and seems gourmet!

Ingredients (yields about 4 servings):

  • 1 box of Pasta Roni (Shells and White Cheddar)… these often go on sale for a dollar or less, so buy them when they’re cheap!
  • 2 C. water
  • 2 Tbsp. butter or margarine
  • 2/3 C. milk
  • 1 can tuna, drained
  • 1-2 tomatoes, chopped
  • optional: about 1/2 C. chopped parsley (it adds some green and nutrition, but you can’t really taste it)
  • optional: a dash of pepper

Instructions:

  1. Bring water and butter to a boil in a medium saucepan.
  2. Add pasta (from the Pasta Roni box) and bring to boil again. Reduce heat to medium. Boil for about 12 minutes uncovered, stirring frequently.
  3. When there is still a little bit of water in there, stir in milk, sauce packet from the Pasta Roni box, drained tuna, and chopped tomatoes. Bring to a boil for about 2 minutes, stirring continuously.
  4. Let stand for about 3 minutes so sauce can thicken.
  5. Stir and serve warm with something… like a green salad.
