Rotini Pasta with Spinach

Ingredients (makes about 2-3 servings):

  • about 8 oz. dry Rotini noodles (or preferred pasta)
  • 2-3 C. baby spinach, washed and roughly chopped
  • about 1 tsp. olive oil
  • salt and pepper to taste
  • optional: grated cheese (I used a blend of Mild Cheddar and Monterey Jack cheese)
Instructions:
  1. Cook pasta according to package. Drain.
  2. Add spinach and place lid over pot to keep the heat in for about 1 or 2 minutes.
  3. Add olive oil, salt, and pepper. Stir.
  4. Serve warm and top with a sprinkle of grated cheese if desired.
Goes great with a fresh vegetable salad!
