Santa Fe Quesadilla

Santa Fe sounds like a great place to visit. And a great place to eat! This Santa Fe Quesadilla is sure to be a hit with your family and friends.

Ingredients (chicken mixture makes enough for about 7 quesadillas):

  • flour tortillas
  • grated or sliced cheese (Colby Jack tastes great!)
  • 1 chicken breast, cubed
  • about 1/4 of a red onion, diced
  • 1 can black beans, drained
  • 1 can whole corn kernels, drained
  • 1/3 C. chunky Pace mild salsa
  • 1/4 C. Ranch dressing
  • about 1 Tbsp. lemon or lime juice
  • optional: guacamole, salsa, or sour cream to dip the quesadilla

Instructions:

  1. Cook cubed chicken and red onion in either a pan or pot with some water until chicken is thoroughly cooked.
  2. Add black beans, corn, salsa, ranch dressing, and lemon juice.
  3. Bring to a boil, then reduce heat to a simmer, stirring often, until heated.
  4. Heat a pan to medium heat. Place a tortilla in the pan. Spread about 2-3 Tbsp. of the chicken mixture onto the quesadilla. Sprinkle cheese on top. Cover with another tortilla.
  5. When the bottom tortilla looks golden, carefully flip the tortilla and cook the other side until golden.
  6. optional: Serve with guacamole, salsa, or sour cream.
