Supreme Guacamole with Easy Taquitos Lunch Recipe

Here is a quick, flavorful lunch recipe. You don’t have to feel as guilty eating packaged taquitos if you whip up some fresh guacamole to go with them!

Ingredients (2 servings):

  • 1 avocado
  • 1 tsp. lemon juice
  • 1-2 Tbsp. fresh Italian parsley, chopped (or Cilantro)
  • 1 Tbsp. chopped red onion
  • salt and pepper to taste
  • 8 store-bought taquitos (steak or chicken)
  • optional: sour cream

Instructions:

  1. Scoop insides of avocado into a little bowl. Add lemon juice. Mash with a fork or spoon (you don’t have to mash it too much… guacamole is good with some chunkiness sometimes).
  2. Stir in parsley and red onion.
  3. Add salt and pepper to taste (always start with a little bit and add little by little if needed.
  4. Warm up the taquitos according to package instructions.
  5. Serve 4 taquitos on a plate with half of the guacamole (and some sour cream if desired).
