Our babysitter brought over some mangoes the other day. We found a simple smoothie recipe online and it turned out so delicious! Rich and creamy — it´s almost like you´re eating slightly melted ice cream.

My kids are not big fans of eating mango chunks because of the stringiness, but when you blend the mango up it eliminates  that issue, so this is a great smoothie recipe for kids. 🙂 I used fresh mango, but if you have frozen mango on hand, this smoothie recipe would be even quicker to whip together.

You can serve this healthy smoothie with toast or pancakes for breakfast. For a snack for the kids (or yourself), serve the smoothie with a few vanilla wafers or graham crackers. If you´re looking for healthier dessert recipes, just top the smoothie with some whipped cream and eat it with a spoon like ice cream!

Instructions for Mango Smoothie Recipe

Ingredients (approximate amounts for 1-2 servings):

  • 1 C. fresh mango (or frozen if you prefer)
  • 1/4 C. vanilla bean Tillamook yogurt
  • 1 ice cube
  • 1/4 C. whole milk
  • 1/8 tsp. vanilla extract

Instructions:

Blend all ingredients together in the blender until smooth and creamy. If you are having trouble blending, you may need a little more liquid (milk). If it is too runny, you can add more mango or yogurt.
