The Super Muffin (with Blueberries)

My husband bought me a muffin pan! I have been wanting one for quite some time now, and once I got it, I realized I have never made muffins before, so the search for recipes/muffin making tips went on…

Here is the first recipe I tried out. The muffins turned out great and it was actually pretty easy! I found the recipe on THIS blog, by Evelyn Cucchiara. Here it is:

Ingredients:

  • 3/4 cup milk
  • 1/2 cup oil or applesauce
  • 1 egg
  • 2 cups white whole wheat flour – Trader Joe’s or King Arthur
  • 2/3 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • cinnamon sugar mixture in a shaker bottle or bowl

Instructions:

  1. Heat oven to 400 degrees. Spray muffin tin with cooking spray.
  2. Mix milk, oil/applesauce & egg in a bowl. Add flour, sugar, baking powder & salt. Stir until flour is just moistened. Do not over stir.
  3. Fill muffin cups 3/4 full. Sprinkle cinnamon sugar mixture on top. Bake 15 – 20 minutes until brown.
