My husband and I would frequently eat a bowl or ¨a few spoonfuls¨ (aka ¨half the container¨) of ice cream after putting the kids to bed. But recently we have been a little more health-conscious. Half a container of ice cream each night is delicious, but also made us feel sluggish and just icky.  So we looked for healthier alternatives. We decided to go with parfait. . This yogurt parfait recipe is just as yummy, or even more delicious, than ice cream. It satisfies our craving for sweets and is really healthy. The yogurt parfaits are also filling enough that we don’t linger in the kitchen all evening with the munchies!

We also decided that Tillamook Vanilla Bean yogurt is AMAZING with these parfaits. Have you ever tried that brand? I don’t normally buy vanilla yogurt because the berry flavors are so delicious, but this Vanilla Bean yogurt is so creamy and goes perfectly with fresh berries and granola. And just a funny little story, one time I was grocery shopping and the only Tillamook yogurt left on the shelves was vanilla! Normally this would be one of those ¨just my luck¨ moments, but this time it wasn´t an inconvenience at all. This vanilla yogurt makes these parfaits extra good. 🙂

Also, I just want to say that my two young children love this parfait recipe just as much as I do. They wanted parfait for breakfast just about every morning for the last two weeks! I´m surprised they haven´t gotten sick of it like they do with most food items if we eat them repetitively. And I don´t mind giving it to them every morning because it is so healthy and so easy to prepare.
