Ingredients (2-3 servings):
- 3 medium Russet potatoes, washed (and peeled if desired)
- about 1 or 1 1/2 Tbsp. olive oil
- about 2 C. baby spinach, washed and chopped
- salt and pepper to taste
- optional: ketchup
Instructions:
- Grate potatoes. Rinse with water until water runs clear. Pat dry with a paper towel or clean dish cloth.
- Heat olive oil in a frying pan on medium heat.
- Add grated potatoes and spread evenly in the pan. Cook about 6 minutes.
- Add spinach and mix with potatoes.
- Spread mixture evenly in pan and cook about 6 minutes.
- Flip and cook about 6 minutes more.
- Serve warm with salt and pepper and ketchup if desired.
