These healthy, chewy old-fashioned oatmeal cookies are the best! They are super easy to throw together and are made with half whole wheat and lots of oats. This recipe makes a lot. If you don’t want to eat them all at once, you can halve the recipe. But what I really recommend is to just make them all and freeze some of the cookies for later. They are yummy right out of the oven or right out of the freezer. 🙂
Ingredients (makes about 60 cookies) :
- 2 sticks (8 oz) unsalted butter, softened
- 1 C. brown sugar
- 1/2 C. granulated sugar
- 1 tsp. vanilla
- 2 eggs
- 1 C. whole wheat flour
- 1 C. all-purpose flour
- 1 tsp. salt
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 2 C. old-fashioned oats
Instructions:
- Preheat oven to 350 degrees F.Â
- Cream together softened butter and sugars. Mix in vanilla and eggs.
- Add dry ingredients (flours, salt, baking soda, and cinnamon). Mix until moistened.
- Stir in oats.
- Scoop cookies onto cookie sheet using a tablespoon scoop.
- Bake in preheated oven for 6-9 minutes.
- Let cookies sit on baking tray for 2-3 minutes after coming out of the oven. They will look fluffy when they come out of the oven, but after a couple minutes, they will set and become beautiful chewy oatmeal cookies.
