I made this orange almond cake for a family get together and everyone was “wowed” by it, even my very healthy mom! I hope you like it too 🙂
Ingredients (makes 1 round (9×1 1/2 inches) layer pan or an 8x8x2 or 9x9x2 inch square pan.):
- 1 1/4 C. all-purpose flour
- 1 C. white sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 C. milk
- 1/3 C. shortening
- 1 egg
- about 2 tsp. grated orange peel (see the note at the bottom of the page)
- about 1/4 C. sliced almonds
- about 1 Tbsp. powdered sugar
Instructions:
- Preheat oven to 350 degrees F.
- Mix together flour, white sugar, baking powder, and salt.
- Add milk, shortening, egg, and grated orange peel and beat with an electric mixer until batter is smooth.
- Pour batter into a greased and lightly floured pan.
- Sprinkle almonds on top.
- Bake at 350 degrees F. for 40 minutes if using a round pan or 40-45 minutes if using a square pan.
- Sprinkle powdered sugar on top of cake right when it comes out of the oven.
- Cool about 10-15 minutes before serving.
*This cake tastes great with a scoop of vanilla ice cream, a glass of cold milk, or even served with a very simple fruit salad (you can use the rest of the orange in the fruit salad.)
