This is a delicious holiday dessert. It tastes like pumpkin pie, but is very easy to throw together and you don’t have to worry about rolling out any crust.
Ingredients:
- 3/4 C. sugar (I used 1/4 C. granulated and 1/2 C. brown)
- 2 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 1/4 tsp. ground cloves
- 1/8 tsp. ground nutmeg
- 3 eggs, beaten
- 30 oz. pumpkin
- 1 (12 oz) can evaporated milk
- 1 box (1 lb) yellow cake mix
- 1/2 (or 1 stick) unsalted butter, softened
- optional, but highly recommended: vanilla ice cream on the side. 🙂
Instructions:
- Preheat oven to 350 degrees F. and grease a 13×9 inch baking pan.
- Combine sugar, cinnamon, ginger, salt, cloves, nutmeg, eggs, pumpkin, and evaporated milk in a bowl and mix.
- Pour mixture into greased baking pan.
- In a new bowl, combine butter with dry cake mix. Mix until crumbly. Sprinkle evenly on top of pumpkin mixture in the pan.
- Bake in preheated oven for 50-55 minutes.
- Serve with vanilla ice cream and/or whipped cream.
