Ingredients (about 4 servings):
- 2-3 boneless, skinless chicken breasts
- about 2 1/2 C. chopped broccoli
- 1 large carrot, diced
- 1 can Campbell’s condensed Broccoli Cheese soup or Cream of Broccoli soup
- 1/4 C. milk
- 3 C. cooked rice
Instructions:
- In a medium pot, cover chicken all the way with water. Bring to a boil and let boil until chicken is cooked all the way through. You can then cut the chicken into smaller pieces if you want to.
- Add chopped broccoli and diced carrot to the water with the chicken and continue cooking until the vegetables are tender.
- Drain the water out.
- Add the can of broccoli soup and the milk. Simmer for about 5 minutes, stirring frequently.
- Serve the chicken and vegetables over warm rice.
