My husband loves this fried rice and it’s really easy to make and it’s inexpensive. Enjoy!
Ingredients:
- 1 C. white rice
- 2 C. water
- 1 Tbsp. Canola oil
- 1 C. frozen veggies (peas, carrots, green beans, lima beans, corn)
- 1 egg
- salt, pepper, and soy sauce to taste
- optional: shredded chicken, pork, beef, or sausage pieces
Instructions:
- Cook rice as directed on the package.
- Heat a pan (high heat) and pour the oil in.
- Dump the cooked rice and the vegetables into the pan.
- Once the vegetables seem to be thawed out, add the egg and mix well.
- Cook until the egg particles look done and the rice begins to brown.
- Add salt, pepper, and soy sauce for more flavor.
Yields about 4 servings.
This fried rice goes great with mustard chicken!
