Ingredients (1 9inch pie):
- 1 deep dish frozen pie crust
- 3 slices of bacon (cooked and torn into small pieces)
- 1/4 chopped onion
- about 1 1/2 C. chopped spinach
- 1/3 C. grated Parmesan cheese
- 1 C. grated Colby Jack cheese
- 4 eggs
- 1 C. Half and Half
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 C. flour
Instructions:
- Preheat oven to 375 degrees F.
- In a large bowl, beat eggs with a fork. Add the Half and Half, salt, pepper, and flour. Use a whisk to help smooth out the clumps from the flour. (it’s okay if there are still small clumps).
- Stir in the crumbled bacon, onion, spinach, Parmesan, and Colby Jack cheese.
- Pour mixture into the frozen pie crust and bake for about one hour.
- Let it set for about 10 or 15 minutes before serving.
