This is the perfect side to any Mexican dish!
Ingredients:
- Cooked Jasmine rice, or Spanish rice
- Cooked, mashed pinto beans (it’s easier to spread if they are a little liquified)
- grated cheese, cheddar or a Mexican blend
Instructions:
In a baking pan, layer rice on bottom, then mashed beans, then sprinkle grated cheese on top.If you are using leftovers, then bake in the oven for about 20 minutes at 350 degrees F. or until the cheese is bubbly.
Serve with salsa if desired.
You can also use this as a quick burrito filling if you spoon a little bit into a heated tortilla.
