Here’s some comfort food for you!
Ingredients (makes 6-8 servings):
- 3 large or 4 medium Russet potatoes (washed and keep peels on)
- 1/2 of a yellow onion, diced
- about 1/2 or 3/4 C. ham (cubed, canned, or you can just chop up deli style sandwich meat)
- about 2 or 3 C. grated cheese (I used Colby Jack)
- 4 Tbsp. butter
- 4 Tbsp. all-purpose flour
- 2 1/2 C. milk
- salt and pepper to taste
Instructions:
- For sauce: Melt butter in a saucepan on medium heat. Add flour and stir until smooth. Add milk, stirring occasionally for about 7 minutes (you want the sauce to get thicker than just milk, but also thin enough so it’s easy to pour over the potatoes). Add salt and pepper to taste.
- Preheat oven to 350 degrees F. and lightly grease a glass 13×9 inch pan.
- Slice two potatoes into thin slices and layer them in the bottom of the pan.
- Sprinkle half of the diced onions and all of the ham evenly on top of the potatoes.
- Pour half of the sauce evenly on top and sprinkle half of the grated cheese on top of that.
- Slice the remaining potato(s) and layer on top of the cheese. Top with the rest of the onions, the rest of the sauce, and the rest of the cheese.
- Bake in preheated oven, on center rack, for about 50 minutes, or until the potatoes are soft when you poke them with a fork. Let sit about 10 minutes before serving.
Goes great with steamed vegetables or a fresh green salad!
