Strawberry salsa might sound kind of strange, but definitely give it a try— it was delicious and added a lovely freshness to the cooked fish. This salsa even got my 2-year-old to eat salmon and keep asking for more!
Ingredients for Salsa (2 servings):
- about 1/2 C. strawberries, diced
- about 1/4 C. grape tomatoes, quartered
- 1 tsp. parsley, chopped
- 1 or 2 green onions, chopped small
- about 1 tsp. balsamic vinaigrette
- a drizzle of olive oil
- a drizzle of honey
- salt and pepper to taste
Ingredients for Salmon (2 servings):
- 1 salmon fillet
- olive oil
- lemon juice
- salt and pepper
Instructions:
- Combine ingredients for salsa in a small bowl. Refrigerate until salmon is ready to be served.
- Heat olive oil on medium heat in a pan. Place salmon in pan. Squeeze some lemon juice on top of salmon, then sprinkle a little salt and pepper on top of that. Let the salmon cook until the bottom is golden, then carefully flip over and squeeze more lemon juice and a little more salt and pepper. Cook until salmon is thoroughly cooked.
- Spoon salsa on top of salmon and serve. Goes great with brown rice or steamed vegetables.
