My sister texted me a yummy pasta dish she created. I didn’t get the exact measurements for everything, but we tried it out and here is what we came up with (and it was GOOD!):
Sweet and Savory Pasta Recipe:
Ingredients (5-7 servings)
- 10-12 oz. penned rigate or farfalle pasta (I used whole wheat penne)
- 1-2 Tbsp. extra virgin olive oil
- 1 red onion, chopped
- about 1 Tbsp. minced garlic
- 3 zucchinis, chopped
- 1/2 tsp. dried rosemary
- 1/4 tsp. salt
- cooked meatballs (however many you want to make – we made 9), warmed in the microwave
- about 4 Tbsp. coconut milk
- about 1 Tbsp. honey
- about 1 C. artichoke pesto marinara sauce
- about 1 C. roasted garlic alfredo sauce
Instructions:
- Cook pasta according to package. Drain, run under cold water, and set aside.
2. Heat olive oil to medium heat in a large pan. Saute onions and garlic until onions are cooked through. Add zucchini, rosemary, and salt and cover with a lid (stirring occasionally) until zucchini is tender.
3. Add meatballs, coconut milk, and honey. Let simmer for a couple minutes and then stir in the marinara and alfredo sauce.
4. Serve over pasta and a fresh green salad on the side goes great with this dish!
