Ingredients:
- 1 roast beef (a little over 2 lbs)
- 1 yellow onion, diced or sliced
- 3 carrots, sliced
- about 7 red potatoes, cut in halves or quarters
- olive oil
- salt
- pepper
- garlic powder
Instructions:
- Preheat oven to 300 degrees F.
- Spread onions on the bottom of a 9×13 inch glass baking dish. Place the roast beef in the center, on top of some of the onions.
- Spread a little olive oil on the top and sides of the roast.
- Place sliced carrots and then potatoes around the roast, on top of the onions.
- Sprinkle everything with salt, pepper, and garlic powder (you may want to rub it into the roast).
- Cover with foil and bake for 3-4 hours, depending on how well-done you want it to be.
Enjoy with bread rolls and a fresh green salad!
