Tender Roast Dinner with Vegetables

Ingredients:

  • 1 roast beef (a little over 2 lbs)
  • 1 yellow onion, diced or sliced
  • 3 carrots, sliced
  • about 7 red potatoes, cut in halves or quarters
  • olive oil
  • salt
  • pepper
  • garlic powder

Instructions:

  1. Preheat oven to 300 degrees F.
  2. Spread onions on the bottom of a 9×13 inch glass baking dish. Place the roast beef in the center, on top of some of the onions.
  3. Spread a little olive oil on the top and sides of the roast.
  4. Place sliced carrots and then potatoes around the roast, on top of the onions.
  5. Sprinkle everything with salt, pepper, and garlic powder (you may want to rub it into the roast).
  6. Cover with foil and bake for 3-4 hours, depending on how well-done you want it to be.

Enjoy with bread rolls and a fresh green salad!
