Ingredients:
- 1 yellow onion, chopped
- 2 cloves garlic, chopped
- about 1 lb boneless, skinless chicken
- 1 can black beans, undrained
- 1 can Canellini (white kidney) beans
- 1 can white beans (navy beans)
- 1 can chicken broth
- 1 can cream of chicken soup
- 1 (4 oz) can diced green chiles
- 1 tomato, chopped (about 1/2 C)
- 1 tsp. freshly chopped Italian leaf parsley
- 1/4 tsp. ground Cumin
- 1/2 tsp. dried Oregano
Instructions:
Place onions and chicken in bottom of slow cooker. Put all the other ingredients on top and stir them gently with a spoon. Cook on low for 8 hours. Shred chicken with a fork.
