This Zucchini Parmesan Side Dish is super tasty and healthy! The zucchini cooks up pretty quickly. We ate ours with pasta, but it would also go well with potatoes, a sandwich, or some type of meat dish. I hope you enjoy your zucchini! Even my 1 year old couldn’t get enough of it! 🙂
Zucchini Parmesan Side Dish Recipe
Ingredients:
- about 1 Tbsp. extra-virgin olive oil
- 2 white zucchinis (the green kind would probably be just as good though), sliced
- salt to taste
- powdered Parmesan cheese to taste
Instructions:
- Heat olive oil to medium heat in a frying pan (use enough to lightly cover the whole bottom of the pan).
- Put just one layer of zucchini slices in the oil and let cook for a minute or two, or until the bottoms begin to brown. Sprinkle lightly with salt.
- Turn the zucchini slices over. Sprinkle lightly with salt, and let cook for another minute or two, or until bottoms begin to brown.
- Sprinkle some powdered Parmesan cheese on top, and serve warm.
