Zucchini Parmesan Side Dish (Quick and Easy)

This Zucchini Parmesan Side Dish is super tasty and healthy! The zucchini cooks up pretty quickly. We ate ours with pasta, but it would also go well with potatoes, a sandwich, or some type of meat dish. I hope you enjoy your zucchini! Even my 1 year old couldn’t get enough of it! 🙂

Zucchini Parmesan Side Dish Recipe

Ingredients:

  • about 1 Tbsp. extra-virgin olive oil
  • 2 white zucchinis (the green kind would probably be just as good though), sliced
  • salt to taste
  • powdered Parmesan cheese to taste

Instructions:

  1. Heat olive oil to medium heat in a frying pan (use enough to lightly cover the whole bottom of the pan).
  2. Put just one layer of zucchini slices in the oil and let cook for a minute or two, or until the bottoms begin to brown. Sprinkle lightly with salt.
  3. Turn the zucchini slices over. Sprinkle lightly with salt, and let cook for another minute or two, or until bottoms begin to brown.
  4. Sprinkle some powdered Parmesan cheese on top, and serve warm.
