I was trying out a little menu-planning system a while back. Ya know, like meatless Mondays, wacky Wednesdays, and Thursday was Thrifty Thursday. My sister gave me a super yummy, inexpensive recipe to try for Thrifty Thursdays. Scrambled eggs, hot dogs, and corn tortillas.
This recipe is not only inexpensive (especially if you guy the hot dogs while they are on sale), but it´s so easy to throw together just a few minutes before you´re ready to eat. I added in the avocados (which can be a little pricey), but we had them on hand and they really complimented this Scramble.
Scrambled Eggs with Hot Dog and Corn Tortillas Recipe
Ingredients (serves 2-3):
- about 1 tsp. butter
- 3 yellow corn tortillas, sliced into bite-sized pieces
- 2 eggs
- 2 hot dogs, chopped
- salt and pepper to taste
- 1-2 avocados
Instructions:
- Melt butter over medium heat in a pan. Cook tortilla pieces in the butter.
- Add hot dogs and eggs. Mix/scramble until eggs are cooked thoroughly.
- Add salt and pepper to taste, and top with chopped avocados.
Enjoy!

Hi this recipe is called Chilaquiles are family has been making it for over 50 yrs, oil works best for us using a little garlic powder and onion powder we slice our hotdogs and add a little cheddar cheese at the end I’m glad you posted this that way others can get a taste of another culture.
