These healthy sloppy joes are delicious!ย There are lots of vegetables to help make them healthy, but they still taste like regular sloppy joes. Enjoy!
[Update: Made these again, but omitted the mushrooms and Worcestershire sauce. Added 2 cloves garlic in place of mushrooms, and 2-3 Tbsp. water at the end to make it less thick. I thought it was even better with these changes!]
Healthy Sloppy Joes
Ingredients (makes 8 sloppy joes):
- about 1 lb. ground beef or ground turkey
- 1/2 of a yellow onion, diced
- 1 green bell pepper, diced
- 1 carrot, grated
- about 1/4 bunch Italian parsley, chopped
- 2 mushrooms, diced
- 1 (6 oz) can tomato paste
- about 1/2 C. ketchup
- 2 tsp. mustard
- 2 tsp. Worcestershire sauce
- 1/2 tsp. garlic powder
- salt and pepper to taste
- 8 hamburger buns
Instructions:
- Cook the ground beef, onion, and bell pepper in a large saucepan until meat is browned and onions are translucent.
- Drain out the fat/liquid.
- Add carrot, parsley, and mushrooms. Mix and continue cooking on medium heat for about 2 minutes.
- Stir in tomato paste, ketchup, mustard, Worcestershire sauce, garlic powder, salt, and pepper.
- Bring to a simmering boil, stir, and remove from heat.
- Spoon the sloppy joe sauce onto the hamburger buns and serve.

What a great recipe. Super easy. Super fast. And I love that it has a variety of veggies hidden in the meat mixture.
Made it again, but this time I lacked several ingredients.instead of bell peppers and mushrooms I added squash and garlic. I also simplify the sauce because I was missing ingredients. It still turned out great. Still had tons of vegetables. My whole family loved it. this has been such a wonderful recipe for me. Works as is and it works with tons of variations.
I almost forgot to mention, I also added a bunch of cooked quinoa. turned out great. just blended right in with everything else.
