Here is a quick, flavorful lunch recipe. You don’t have to feel as guilty eating packaged taquitos if you whip up some fresh guacamole to go with them!
Ingredients (2 servings):
- 1 avocado
- 1 tsp. lemon juice
- 1-2 Tbsp. fresh Italian parsley, chopped (or Cilantro)
- 1 Tbsp. chopped red onion
- salt and pepper to taste
- 8 store-bought taquitos (steak or chicken)
- optional: sour cream
Instructions:
- Scoop insides of avocado into a little bowl. Add lemon juice. Mash with a fork or spoon (you don’t have to mash it too much… guacamole is good with some chunkiness sometimes).
- Stir in parsley and red onion.
- Add salt and pepper to taste (always start with a little bit and add little by little if needed.
- Warm up the taquitos according to package instructions.
- Serve 4 taquitos on a plate with half of the guacamole (and some sour cream if desired).
