Pumpkin Cobbler

This is a delicious holiday dessert. It tastes like pumpkin pie, but is very easy to throw together and you don’t have to worry about rolling out any crust.

Ingredients:

  • 3/4 C. sugar (I used 1/4 C. granulated and 1/2 C. brown)
  • 2 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1/4 tsp. ground cloves
  • 1/8 tsp. ground nutmeg
  • 3 eggs, beaten
  • 30 oz. pumpkin
  • 1 (12 oz) can evaporated milk
  • 1 box (1 lb) yellow cake mix
  • 1/2 (or 1 stick) unsalted butter, softened
  • optional, but highly recommended: vanilla ice cream on the side. 🙂
Instructions:
  1. Preheat oven to 350 degrees F. and grease a 13×9 inch baking pan.
  2. Combine sugar, cinnamon, ginger, salt, cloves, nutmeg, eggs, pumpkin, and evaporated milk in a bowl and mix.
  3. Pour mixture into greased baking pan.
  4. In a new bowl, combine butter with dry cake mix. Mix until crumbly. Sprinkle evenly on top of pumpkin mixture in the pan.
  5. Bake in preheated oven for 50-55 minutes.
  6. Serve with vanilla ice cream and/or whipped cream.
