Quick and Easy Black Beans

This easy black beans recipe turned out great! They cooked up quickly, are super healthy, and tasted amazing. The recipe just calls for 1 lime, but we served the black beans with a lime wedge for each person to squeeze a little extra lime juice to make these easy black beans a little zingy. 🙂

Quick and Easy Black Beans Recipe

Ingredients (yields 5-6 servings):

  • 2 Cans Black Beans, drained and rinsed
  • 1/2 T olive oil
  • 2/3 C diced onion
  • 2–3 garlic cloves, minced
  • 2/3 C chicken broth (or water)
  • 1/4 t cumin
  • 1/4 t coriander
  • 1/4 t oregano
  • 1/2 t salt
  • 1/4 t pepper
  • 1 (or 2) lime(s)

Instructions:

  1. In a saucepan, heat olive oil to medium-high heat. Saute onions until they become translucent, then add garlic and saute for about 30 more seconds.
  2. Add beans, broth (or water), cumin, coriander, oregano, salt, and pepper and bring to a boil. Reduce heat to low and simmer for about 7 minutes, stirring occasionally.
  3. Remove from heat and squeeze some lime juice into the beans. Then mash them a little bit with the spoon. Don’t mash too much, but enough to just thicken the beans a bit.

Serve topped with cheese, tomatoes, avocado, and/or romaine lettuce.
