You can make these egg burritos in about 5 minutes. They are simply delicious!
Ingredients (yields 4 burritos, or 2 servings):
- 4 eggs
- about 2 Tbsp. milk
- about 2 Tbsp. water
- 1 tomato (chopped)
- cheese of your choice
- optional: salsa
- optional: chopped green onions
- 4 flour tortillas (you can use whole wheat tortillas!)
Instructions:
- Warm up a frying pan to medium-high heat.
- Combine eggs, milk, water, and green onions in a bowl and mix with a fork and then pour into the hot frying pan.
- Scramble the mixture. Once the eggs are thoroughly cooked, turn the heat off and add the chopped tomato.
- Place the tortillas in the microwave (2 at a time) for about 20 seconds so that they are more flexible and warm.
- Spoon egg mixture into each tortilla, sprinkle cheese and salsa on top and fold into a burrito.
- Serve warm.
