Egg Burritos Breakfast Recipe

You can make these egg burritos in about 5 minutes. They are simply delicious!

Ingredients (yields 4 burritos, or 2 servings):

  • 4 eggs
  • about 2 Tbsp. milk
  • about 2 Tbsp. water
  • 1 tomato (chopped)
  • cheese of your choice
  • optional: salsa
  • optional: chopped green onions
  • 4 flour tortillas (you can use whole wheat tortillas!)

Instructions:

  1. Warm up a frying pan to medium-high heat.
  2. Combine eggs, milk, water, and green onions in a bowl and mix with a fork and then pour into the hot frying pan.
  3. Scramble the mixture. Once the eggs are thoroughly cooked, turn the heat off and add the chopped tomato.
  4. Place the tortillas in the microwave (2 at a time) for about 20 seconds so that they are more flexible and warm.
  5. Spoon egg mixture into each tortilla, sprinkle cheese and salsa on top and fold into a burrito.
  6. Serve warm.
